First let’s start with the list of ingredients.

Ingredients

  • For the Rice: Grab 1 cup of white or brown rice, 2 bay leaves, 1 tablespoon of lemon juice, and a pinch of salt. We shall turn these basics into flavorful rice that’s the heart of our bowl.
  • For the Kidney Beans: You’ll need 1 cup soaked and then boiled kidney beans. If you want, you can use tin beans also but I would suggest you to use fresh beans for great taste and avoiding preservatives. We will also use taco seasoning to giving your beans that irresistible Chipotle twist.
  • For the Veggies: Get 1 cup of capsicum, 1 onion, and 1 tomatoes. Sprinkle in 1 tablespoon of taco seasoning and salt as per taste to make these veggies pop.
  • For the Guacamole: Mash up 2 ripe avocados, add 1 finely chopped tomato and onion, a squeeze of lime juice, and a pinch of salt and black paper. Voila! You’ve got guacamole.
  • For the Tomato Onion Salsa: Mix 1 diced tomato, 1/2 diced onion, a handful of chopped cilantro, 1 tablespoon of lime juice, and salt. This salsa will add a zesty kick.
  • For Garnish: Top it all off with tortilla chips for that extra crunch.

Step-by-step recipe

  • First Prepare the Rice. Rinse 1 cup of rice. Cook it with 2 bay leaves, 1 tablespoon of lemon juice, and a pinch of salt until it’s nice and fluffy.
  • Prepare the kidney beans: Heat up little oil. Add boiled kidney beans with 2 tablespoons of taco seasoning. Stir well until the beans are coated and heated through. If you want you can add routine Indian spices (coriander powder, turmeric powder, red chili powder) to add slight Indian touch to your recipe.
  • Sauté the Veggies: Sauté 1 diced onion, 1 capsicum and 1 diced tomatoes. Add 1 tablespoon of taco seasoning and cook until they’re tender but still a bit crisp.
