Hi everyone,  

Excited to share another post for series #CleveryinTheKitchen. In this post, I am sharing two amazing sandwich recipes, chickpea and curd sandwich recipe. How to make these amazing sandwiches? Read the post to know more! 

USP of chickpea and curd sandwich recipe 

  • Both recipes are high in protein. By adding varieties of veggies, we will make it more nutrition dense. Both are ideal option for a healthy start of the day.  
  • These recipes are quick to make. You can make a stuffing or curd mixture ahead and can store them in fridge. Use this stuffing in busy mornings and prepare a healthy breakfast in less time.  
  • Lastly, both recipes are perfect for lunch box too. You can pack them for your kid’s tiffin or can bring them at your workplace for a healthy homemade lunch.  

Let’s start with the first recipe.  

Chickpea sandwich

Ingredients 

Chickpea sanwich
  • Boiled and mashed chickpeas 1-2 cup  
  • Boiled and mashed potato 1 cup 
  • Hung curd or mayo 1-3 TSP 
  • Finely chopped tomato, onion 1 cup  
  • Finely chopped other veggies of your choice like cucumber, green or carrot 1 cup (optional) 
  • Green Cordiner chutney, tomato catch up (as per your taste) 
  • Salt, black paper as per your taste 
  • Green Cordiner leaves or other herbs of your choice: take bunch of leaves 

Method 

  • Soak the chickpea overnight and pressure cook it for 4-5 whistle by adding little salt and baking soda. If you want, you can use tin packed chickpea also, but wash them thoroughly, before using it.  
  • Take a bowl and mash the boiled chickpea properly with a masher.  
  • Boiled the potato and mash them properly. Mixed boiled and mashed potato with mashed chickpea.  
  • Now, take another bowl and prepare a hung curd mixture. Take ½ cup hung curd and whisk it properly. Add finely chopped tomato, onion and other veggies of your choice to mixture.  
  • Add this hung curd mixture to chickpea and potato mixture.  
  • Add seasoning, salt, black paper and little sugar. You can add other spices (like red chili powder) as per your taste. Next, add prepare green chutney and tomato catch-up as per your taste.  
  • Mixed all things properly and prepare a smooth spread.  
  • Take wheat or multigrain bread, spread the prepare stuffing smoothly on one bread and cover with other bread.  
  • Toast the bread for few minutes by applying ghee on both sides.  
  • Your tasty and yummy chickpea sandwich is ready to enjoy. Along with breakfast, you can have this a light dinner too.  
  • You can store prepare prepared chickpea and potato stuffing is an air-tight container for 1-3 days in refrigerator and can prepare yummy sandwiches in less time, during busy mornings.  

Curd sandwich

Preparing chickpea sandwiches take some amount of time and require pre-preparation too. If you are having a tight schedule and did not have that much time, then try curd sandwich recipe. It is much quicker option than chickpea sandwich recipe.  

Ingredients

  • Hung curd 2 cup 
  • Finely chopped veggies of your choice (carrot, cucumber, capsicum, corn etc.): 1 cup. I prefer to grate the carrot and cucumber for better result.  
  • Finely chopped onion and green chili (optional) as per your taste 
  • Salt, sugar, black paper powder: as per your taste 
  • Bread: you can use white, wheat or multigrain bread as per your preference.  
  • Butter or ghee: for toasting the sandwich.  

Method 

  • Take a bowl and add hung curd. If you are using normal yogurt, then mixed 1 TSP of mayo to curd for getting good results.  
  • Now, add finely chopped veggies one by one and mixed all things together properly.  
  • Next, add finely chopped onion and green chilies, if you want.  
  • Add seasoning, salt, sugar and black paper powder and mixed all things together.  
  • Apply this prepare mixture to one side of bread and cover with other bread.  
  • Apply ghee or butter on skillet and toast the prepare sandwich for few minutes, until it turns golden brown.  
  • Your tasty and healthy curd sandwich is ready to enjoy.  
  • You can pack this as a kid’s lunch box option too.

    I make both these sandwiches. Chickpeas make us very filling. I sometimes use the hot dog buns instead of regular bread and sprinkle some cheese on the slit before toasting.

    This is a unique chick pea sandwich, Surbhi. I have never had or heard of one 🙂 But now I will surely try. The hung curd one is my favourite. No need of any mayo or cream

      Both sandwiches are worth the try . I have never tried chickpea . Will try for sure . Must be very filling. Hung curd one we like it .
